Omelette

Ingredients
3 eggs 1 tablespoon Milk Salt and Pepper ½ red capsicum, diced 1 small carrot, grated Handful of diced bacon 1 tomato, diced Handful of grated cheese Olive oil for frying Fresh herbs, chopped
Method

Crack eggs into a bowl. Add milk, salt and pepper. Whisk until just combined. Heat olive oil in a frying pan over medium heat. Add capsicum, carrot, bacon and fry for 1 minute.

Then add tomato and continue frying for 1 more minute.

Pour egg mixture over vegetables and sprinkle with cheese. Cover with lid, reduce heat to low and cook until omelette sets.
