Omelette

 
 

      Ingredients
  • 3 eggs
  •  
  • 1 tablespoon Milk
  •  
  • Salt and Pepper
  •  
  • ½ red capsicum, diced
  •  
  • 1 small carrot, grated
  •  
  • Handful of diced bacon
  •  
  • 1 tomato, diced
  •  
  • Handful of grated cheese
  •  
  • Olive oil for frying
  •  
  • Fresh herbs, chopped

      Method

Crack eggs into a bowl. Add milk, salt and pepper. Whisk until just combined. Heat olive oil in a frying pan over medium heat. Add capsicum, carrot, bacon and fry for 1 minute.

Then add tomato and continue frying for 1 more minute.

Pour egg mixture over vegetables and sprinkle with cheese. Cover with lid, reduce heat to low and cook until omelette sets.
