Ricotta Muffins

 
 

      Ingredients
  • 250g ricotta cheese
  •  
  • 1 cup caster sugar
  •  
  • 1 egg
  •  
  • 1 cup milk
  •  
  • 50g unsalted butter, melted
  •  
  • 2 cups self-rising flour
  •  
  • ½ tsp salt
  •  
  • Vanilla sugar or vanilla extract
  •  
  • ½ cup chocolate chips (optional)

      Method

Preheat oven to 180°C. Using the electric mixer with the paddle attachment, mix together the ricotta, sugar, eggs, salt, vanilla and melted butter. Gradually add milk. Then add flour and mix well until combined. Add chocolate chips.

Spoon mixture into 12 holes muffins pan lined with paper muffin cases.

Bake for 15 - 20 minutes or until golden brown.
