Pumpkin Soup with Apples and Swedes

Ingredients
Olive oil for cooking 1 onion, diced 2 cloves of garlic, sliced 700g pumpkin, peeled and diced 1 swede, peeled and diced 2 apples, peeled and cut into medium pieces 1 cup vegetable stock Salt and pepper 1/3 teaspoon ground sage leaves
Method

Prepare all ingredients.

Heat oil in a large saucepan over low heat then add onion and garlic. Sauté until translucent.

Add pumpkin, swedes, apples and cook, while stirring for 5 minutes.

Then add stock, salt, pepper, sage mix and bring to the boil. Turn heat to low, cover and simmer until all vegetables are very tender. Blend soup to desired texture. Check seasoning. Serve with drizzle of cream or dollop of sour cream.
