Marinated Chicken

 
 

      Ingredients
  • 1-2 small chicken (I use twin pack from Red Lee store)
  •  
  • 3 large onions, thinly sliced
  •  
  • 4 tablespoon Soy Sauce
  •  
  • 4 tablespoons Apple vinegar
  •  
  • 4 tablespoons Olive Oil
  •  
  • 1 teaspoon Brown sugar
  •  
  • 3 garlic cloves, roughly chopped
  •  
  • ½ teaspoon Cumin Powder (ground cumin seeds), ½ Coriander Powder (ground coriander seeds)
  •  
  • Salt, Pepper
  •  
  • Large Oven Bag from supermarket
  •  
      Method

In a small bowl combine soy sauce, vinegar, olive oil, sugar, garlic, spices, salt and pepper. Whisk well. Place chicken, breast side up, on a clean work surface. Cut breast in half, splitting breast bone. Press chicken to open flat. Combine chicken, onion, and marinade. Mix. Cover and leave in the fridge for 1 hour.

Preheat oven to 180C. Place marinated chicken into the bag and tie off. Pierce some holes in on top of the bag. Place into the oven and cook for 1 hour. Then open top of the bag and cook for more 10 minutes until golden colour.
