Place the chicken between 2 sheets of Clingfilm then pound with a meat mallet to flatten.
Whisk eggs in a bowl, add salt and pepper.
Heat olive oil in a frying pan over medium heat. Dip chicken pieces into egg mixture and fry both sides until golden. Then sprinkle with onion and garlic, reduce heat to low-medium, cover with lid and cook for another 5 minutes to make sure that the chicken cooked through.
