Fish and Potato Pie

 
 

      Ingredients
  • 4-5 potatoes, peeled
  •  
  • 2 tablespoon Olive oil
  •  
  • 1 cup frozen peas,
  •  
  • 1 kg salmon filets, skin-off (sometime I use white fish filets)
  •  
  • 40g butter
  •  
  • 2 tablespoons Plain Flour
  •  
  • 2 cups Milk
  •  
  • 100g Tasty cheese, grated
  •  
  • 1 tablespoon seeded mustard
  •  
  • 100g parmesan Cheese
  •  
  • Salt, Pepper

      Method

Place potatoes in a saucepan and boil until tender. Add olive oil, season with salt and pepper then mash coarsely. Set aside. Cut fish fillets into large pieces. Spoon the flour into a cup, add 150 – 200 ml of cold milk and whisk until smooth. Then pour the rest of the milk into a saucepan, place on heat and gradually add flour mixture, stirring, until well combined. Add mustard, butter, salt and pepper, stir. Heat the sauce, stirring over a low heat until mixture boils and thickens. Stir in the fish and Tasty cheese and continue to simmer for 5 mins.

Spoon fish mixture into prepared ovenproof dish, add peas and then spread potato mash over top. Sprinkle with parmesan cheese and bake for 25 min or until the cheese is melted and potato is golden.
