Beef and Potato Pie

 
 

      Ingredients
  • Pastry: 250g unsalted butter, cold
  •  
  • 2 cups Plain Flour
  •  
  • 120ml cold water
  •  
  • Pinch of salt
  •  
  • Stuffing: 250g Beef mince
  •  
  • 3 onions, finely chopped (I use a food processor for this)
  •  
  • 4 potatoes, diced
  •  
  • ½ cup water or beef stock
  •  
  • Salt, Pepper, Spices of your choice
  •  
  • 1 egg for brushing, Sesame seeds
  •  
  • Olive oil spray for greasing the form
  •  
      Method

Preheat oven to 180°C. To make a pastry: Place butter and flour into a food processor bowl and process for a few minutes until it reaches breadcrumb consistency. (Or grate the butter and using your hands mix with flour). Then add salt and water and process until the mixture comes together into a ball. Cover with plastic wrap and put into the fridge until you prepare the stuffing.

Using a food processor, process onion for a few seconds. Then, in a bowl, combine onion, beef mince, potatoes, salt and pepper. Add water and mix well. Turn dough onto a floured surface and roll out to form a circle, aprox.7mm high. Spoon stuffing in a thin layer over pastry, leaving a 9 cm border.

Fold pastry edge over filling. Brush with beaten egg and sprinkle with sesame seeds.

Bake until pastry is golden. Slice and serve with sour cream and salad.
