Apple Pie

Ingredients
For the pastry: 125g unsalted butter, cold 60 ml cold water 1 cup Plain Flour Pinch of salt For the Filling: 4 large Granny Smith Apples (or Gala), peeled and cut into pieces ½ cup Sugar (may vary depending on apple sweetness) 50g unsalted butter Cinnamon Milk or beaten egg for brushing Olive oil spray for greasing the form.

Preheat oven to 180°C. Place cold butter and flour into a food processor bowl and process just for a few seconds until it reaches breadcrumb consistency. (Or grate the butter and using your hands mix with flour) Then add salt and water and process until the mixture comes together. Remove from the processor, wrap with plastic wrap and refrigerate for 40 minutes.

On the floured surface, roll out two thirds of dough, to form a circle (aprox.28 cm diameter). Place apples over pastry, leaving a 2cm border. Lay pieces of butter on top of the apples and sprinkle with sugar.

Thinly roll out remaining dough . Place the dough over the apples, seal edges, brush with milk or beaten egg, and sprinkle with sugar.
Bake until golden.
