Gluten - Free Cookies

 
 

      Ingredients
  • 150g almond meal
  •  
  • 150g icing sugar
  •  
  • 80g rice flour
  •  
  • 3 egg whites
  •  
  • Handful of almond or cashew nuts.
  •  
      Method

Preheat oven to 180°C. In a bowl combine almond meal, icing sugar and rice flour. Mix.

Add egg whites and mix until combined. Set aside for 15 minutes.

Wet your hand with water, roll teaspoons of mixture into balls and lay on prepared tray. Flatten each ball with your finger and put the nut in the center of each cookie.
