Rice with Vegies

 
 

      Ingredients
  • 1 onion, chopped
  •  
  • 2 garlic gloves, crushed
  •  
  • ¼ cabbage, shredded
  •  
  • 2 carrots, grated
  •  
  • 2 cups cooked rice
  •  
  • 1 egg (optional)
  •  
  • Fresh coriander, chopped
  •  
  • Salt, pepper
  •  
  • 2 tbsp. soy sauce, 2 tbsp. lemon juice
  •  
  • 2 tsp. brown sugar, 2 tbsp. sesame oil
  •  
  • ½ tsp. paprika
  •  
  • Olive oil for frying
  •  
      Method

Heat olive oil in frying pan, add onion and garlic and fry for 1 minute.

Add carrot and continue to fry.

Then add cabbage, mix well and fry until vegetables become softer.

Add chicken, rice and egg. Mix and cook for few minutes until egg sets.

Add sesame oil, soy sauce, lemon juice, brown sugar, paprika, salt and pepper. Mix well. Turn the heat off.

Sprinkle with fresh coriander.
