Potato bake.

 
 

      Ingredients
  • 1 kg potatoes
  •  
  • 2 large onions (chopped)
  •  
  • 150 – 200g bacon (diced)
  •  
  • 2 tblsp plain flour
  •  
  • Oil for frying
  •  
  • Salt, pepper
  •  
      Method

In a frying pan, cook onion and bacon until slightly browned. Turn the heat off.

Place potatoes in a food processor and process until smooth.

Combine potatoes, onions, bacon, flour, salt and pepper.

Preheat oven to 190°C. Pour mixture into greased pan. Cover with foil and bake for 35 minutes. Remove foil and bake for a further 10 minutes or until golden. Leave for 10 minutes to cool. Serve with sour cream.
