Crack eggs into a bowl. Add milk, salt and pepper. Whisk until just combined. Heat frying pan, add olive oil.
Pour the egg mixture into frying pan. When the bottom of the omelette is cooked, cover with lid, reduce heat and cook for few minutes until the top of the omelette sets.
Place omelette on a plate. Lay slices of avocado on top and squeeze with lemon juice. Then top with fresh coriander and tomatoes. Season with salt and pepper. Roll the omelette up. Cut in half.
