Lentils with Vegetables

 
 

      Ingredients
  • 1 cup cooked green lentils (You can use canned lentils)
  •  
  • 2 zucchinis, cubed
  •  
  • 2 red capsicums, cleaned and cubed
  •  
  • 2 tomatoes, cubed
  •  
  • 1 onion, roughly chopped
  •  
  • 2 -3 garlic gloves, crushed
  •  
  • Olive oil for frying
  •  
  • 1 tblsp lemon juice
  •  
  • ½ tsp brown sugar
  •  
  • Salt and pepper
  •  
  • Fresh dill or coriander, finely chopped
  •  
      Method

Heat oil in frying pan, add onion, garlic and fry for 1 minutes.

Add zucchinis and capsicums and continue to fry for 5 minutes.

Add tomatoes and fry gently for a few minutes. Then add salt, sugar, pepper, lemon juice and mix well.

Add lentils, mix again and cook for a further 1 – 2 minutes. Taste for salt and pepper. Turn the heat off, sprinkle with fresh dill or coriander.
