Lentils with Vegetables

Ingredients
1 cup cooked green lentils (You can use canned lentils) 2 zucchinis, cubed 2 red capsicums, cleaned and cubed 2 tomatoes, cubed 1 onion, roughly chopped 2 -3 garlic gloves, crushed Olive oil for frying 1 tblsp lemon juice ½ tsp brown sugar Salt and pepper Fresh dill or coriander, finely chopped
Method

Heat oil in frying pan, add onion, garlic and fry for 1 minutes.

Add zucchinis and capsicums and continue to fry for 5 minutes.

Add tomatoes and fry gently for a few minutes. Then add salt, sugar, pepper, lemon juice and mix well.

Add lentils, mix again and cook for a further 1 – 2 minutes. Taste for salt and pepper. Turn the heat off, sprinkle with fresh dill or coriander.
